8  Easy Microwavable Recipes for College Students

When I was in college, my roommate was the queen of the microwave.  If it was microwavable, she attempted it and usually always had a great success! Now that I have a daughter in college, home cooked meals are usually limited to when she visits on the weekends. So, I decided to do some research plus send a message to my old friend for some easy microwavable recipes for college students. Sometimes, the cafeteria food gets old, and they want to try new things. All your college student needs is a mug or plate, a few ingredients, a microwave, and a hungry stomach. Even if you do not have a college student, these recipes would be great for kids to make in the microwave as an after school snack.  My eight year old daughter made the “Pizza In A Mug” and she was so proud of herself! Below are eight easy microwave recipes tested, tasted, and approved!

1.) French Toast

Ingredients Needed:
2 Pieces of Bread
1 Tablespoon of Butter or Margarine
1 Egg
3 Tablespoons of Milk
Dash of Cinnamon
Syrup
Vanilla Extract (optional)
Powdered Sugar (optional)

2 Minute French Toast In A Mug

Directions:  Take one to two pieces of bread and cube it. Melt 1 tablespoon of butter in your mug in the microwave. Remove mug and swoosh butter around the mug coating it lightly. Place bread cubes into your mug. Fill your mug to overflowing a bit. In a separate cup, combine 1 egg, 3 tablespoons of milk, a dash of cinnamon, and a drop of vanilla extract (vanilla is optional). Now, pour this liquid over the bread. Stir the bread and mixture lightly allowing the liquid to be soaked up into the bread. Place in the microwave now and start cooking for one minute. Remove and check consistency. Then, add 10 seconds at a time to be cooked until your liking with no runny eggs. The total time to cook this is around one minute and 20 seconds. Remove once cooked, and add syrup and sprinkle with powdered sugar if desired.

2.) Low Carb Pepperoni Chips

Ingredients Needed: 15 Pepperoni Slices

Directions:  Stack two paper towels on a microwavable plate. Lay pepperonis individually out on the paper towels. Microwave for 2 ½ minutes. Let them set for about 30 seconds to harden after cooking. They are crispy, delicious, and low carb! These are yummy to dip in French onion dip!

3.) Mug Cup Mac & Cheese

Ingredients Needed:
1 Box of Macaroni and Cheese
1/3 Cup of Water
1 Tablespoon of Butter
1 Tablespoon of Milk

Directions:  With one box of Macaroni and Cheese, you will be able to make 3 meals.  First, we must proportion each one.  Take 1 box of cheap macaroni and cheese, and separate the noodles into 3 equal parts in snack size bags. Then, separate the cheese powder into three separate snack size bags as well. Next, put one cheese packet inside one noodle bag.  Now, we are ready to make Mug Cup Mac & Cheese as directed below.
Take one of the separated bags of noodles and one packet of the powdered cheese.  Place noodles in the cup, add 1/3 Cup of water in the cup. Cook for 4 to 4 ½ minutes in the microwave. Remove mug from microwave, add cheese packet, 1 tablespoon of milk, and 1 tablespoon of butter. Stir and enjoy!

4.) Chocoate Cake in a Mug

Ingredients Needed:
1 Chocolate Cake Mix
1 Tablespoon of Water
2 Tablespoons of Unsweetened Applesauce

Directions:

Chocolate Cake in a Mug

Place 6 tablespoons of a chocolate cake mix, 1 tablespoon of water, and 2 tablespoons of unsweetened applesauce in a large microwaveable mug. Mix well with a mini whisk or spoon until batter is smooth. You can sprinkle with chocolate chips on top if you would like. Cook in the microwave for 1 minute on full power. Allow the cake to cool a few minutes before eating. If you do not have apple sauce, you can substitute 2 tablespoons of water and ½ tablespoon of oil instead of using the apple sauce and water mentioned above. However, using the apple sauce keeps the cake more packed and together. When using the oil, the cake tends to have loose crumbs.

5.) Mug Pizza

Ingredients Needed:
4 Tablespoons of Self-Rising Flour
3 Tablespoons of Milk
1 Tablespoon of oil
1 Tablespoon of Marinara or Spaghetti Sauce
2 Tablespoons of Mozzarella
5 to 6 Pepperonis
½ Teaspoon of Dried Italian Herb Seasoning
Dash of Garlic Salt

Directions:

Mix 4 tablespoons of self-rising flour, 3 tablespoons of milk and 1 tablespoon of oil in a microwaveable mug. There might be a lump but that is ok. Next sprinkle ½ teaspoon of dried Italian herb seasoning and a very little dash of garlic salt. Stir again. Then, spoon on 1 tablespoon of marinara or spaghetti sauce and spread it around the surface of the batter. Sprinkle with 2 tablespoons of shredded mozzarella cheese and 5 pepperonis. Microwave for 1 minute and 45 seconds or until it rises and the toppings are bubbling. Timing may vary depending on the wattage of the microwave. Eat and enjoy right away!

6.) Scrambled Eggs

Ingredients Needed:
2 eggs
3 tablespoons of Water

Directions:  Crack two eggs and pour mixture in a coffee mug. Add 3 tablespoons of water and stir. Microwave eggs for one minute. Remove mug and stir. Replace back in the microwave and cook for two more minutes. Remove, stir, and enjoy!
You can always add ham and cheese to your mixture to make an omelet in your mug!

Scrambled Eggs in a Mug

7.) BBQ Chicken

Ingredients Needed:
1 thawed boneless skinless Chicken Breast
Approximately 2 Tablespoons of BBQ Sauce

Directions:  Spread BBQ sauce on top of one boneless skinless chicken breast then wrap in saran wrap. Make sure it is slightly vented and not super tight around the chicken. Cook on medium in the microwave for 15 minutes or until there is no pink. You could also substitute Italian Dressing in place of BBQ sauce if you would like a different flavor!

8.) 2 Ingredient Fudge

Ingredients Needed:
1 Bag of Chocolate Chips
1 can of Chocolate Cake Frosting

Directions:  Place one bag of chocolate chips and 1 can of chocolate cake frosting inside a microwave bowl. Stir and place bowl in microwave. Cook for 1 minute. Remove bowl from the microwave and stir. Place back in the microwave and cook for another minute to minute and a half until chocolates are melted and mixed well. Line a cake pan with wax paper for later easy removal. Remove melted fudge and spread fudge in a cake pan. Place fudge in the fridge to harden. Enjoy! You can add nuts to the melted mixture if you would like. You can also do this with white chocolate chips and vanilla frosting, too!

This is the simple 2 ingredient fudge. I used a can of hot pink vanilla cake icing and 1 package of white chocolate chips. I topped it off with sprinkles once I had it spread in the pan. We called it Unicorn Fudge! It was a huge hit at my daughter’s Birthday Party!
